One of the most popular offerings on Coya’s quality-packed menu, we didn’t expect to love this seabass risotto as much as we did, but now we can’t stop thinking – and now writing – about it. This beautifully conceived dish pairs Chilean seabass with rice, lime and chilli to create a fresh, zingy and slightly fiery delight that’s perfectly cooked and tastes just like a little bowl of South America – a pleasing blend of seafood and spice in heart-warming quantities. For something decadent and delicious, try the langosta. It’s a beautiful combination of lobster, rice (not arborio) and pea shoots, featuring light flavours that smell like spring.

It’s Marina Social’s second birthday this month, so if you drop by to help them celebrate, consider ordering this beautiful and surprisingly light dish that’s perfect for welcoming the UAE’s (slightly) cooler weather. Whipped up with fresh peas, wet garlic, Parmesan and summer truffle, this genius dish – with its intensely flavoured individual ingredients – could prove disastrous if cooked by the wrong person, but the chefs here have nailed the pairings perfectly. If you’re sticking with Italian fare but want pasta, the hand-rolled farfalle pasta with artichoke barigoule and basil is high-five worthy.
