Head chef of Mint Leaf of London Dubai, Vivek Kashiwale moved to Dubai two years ago having previously headed up the Mint Leaf team in London. He has 15 years of culinary experience at prestigious establishments across the UK and India under his belt, receiving the award for “Best Starter” at the Leeds Curry Awards in 2008 as well as the Oliver Award for “Best Indian Restaurant in Yorkshire” in 2012. Right now he’s devising healthy options for Mint Leaf of London’s new menu.

What was the last thing you cooked for yourself?
We were having a break during the photoshoot for our new healthy options menu and I made stir-fried duck with Romero peppers and onions. In fact, it came out so well we added it to the regular menu!

What was the last restaurant you dined in just for fun?
I went to Pier 7 with friends. We popped into all levels to have a look so I don’t remember the one we ended up eating in!What was the last memorable meal you ate?
A Czech friend of mine was visiting last week and cooked a three-course meal for us, which was a nice treat being a chef. It wasn’t the fanciest food I have ever eaten, but his banter and running commentary at every step (it was as if he had his own TV show), plus the company of old friends made it a very memorable evening.

What was the last picture you took on your phone?
Food pictures for Mint Leaf’s Valentine’s Day menu.

When was the last time you did something for the first time?
When I addressed a member of the royal family as His Highness when he came to dine with us at the restaurant.

When was the last time you did something courageous?
I have a fear of heights, but I have just booked myself a skydive. It is scheduled for next week so keep your fingers crossed for me.

When was the last time you raised your voice?
It was actually during lunch time service today. I have a big kitchen and sometimes it’s hard to get everyone’s attention!
