Moana Seafood Restaurant

Seafood is the specialty at this water’s edge restaurant, nestled in the heart of the resort – but fine fishy food is no longer sole-ly the lobster and the oyster’s stomping ground. Moana’s raw bar is overflowing with fresh sashimi, sushi and ceviche, and Alaskan crab while sumptuous seafood platters and tuna tartare sit proudly on the menu as expected. Alongside them, though, diners will also notice the humble prawn cocktail, fish and chips and a selection of signature seafood curries. Can’t decide? Nobu

A long-standing icon on the local fine-dining scene, Chef Nobu’s restaurant within Atlantis The Palm hardly needs an introduction, but it’s not just the name that draws the crowds. Its fame is made of substance – service is exceptional, whether you’re there for the (excellent value) Friday brunch, or a long, relaxed dinner. You’ll leave knowing your waiter’s name, keen to return to visit again soon. With such an extensive selection, we recommend the tasting menu to experience its best bits. Every dish that comes out of the open-plan kitchen (full of Japanese chefs) is an exciting experience for both the eyes and the palate.

Mekong

Restaurants need not specialise in one cuisine to be given fine-dining wings, but if you’re going to mix it up, a more eclectic menu must not be at the mercy of Doing Things Properly – and this is where Mekong wins. Dining at Mekong, within the sprawling Asia-inspired Anantara resort, takes diners on a vibrant journey through the food of Vietnam, China and Thailand. Here, chicken satay or dim-sum shunners and pad thai or crispy duck lovers can all dine in harmony.

Seagrill

Barbecue grills and fine dining may traditionally have appeared at opposite ends of the gastronomic spectrum, but this sea-view favourite at Fairmont the Palm proves that serving up the former in its finest form, with a little help from a sought-after setting, qualifies Seagrill’s presence in a round-up of the latter. The burgers (wagyu beef or lobster), grilled squid and juicy lamb chops sit alongside four types of oysters and five different caviars on the Mediterranean-inspired menu. Simpler old favourites like burrata, bruschetta, Niçoise salad and vegetable soup starters help keep Seagrill open-to-all.

Heinz Beck himself says the secret to fine dining in 2016 is more casual service with the same stringently high quality ingredients and cooking, and that is precisely what you get at his Waldorf Astoria the Palm restaurant. The dishes say fine dining, but the atmosphere says best-friend’s kitchen. The waiters are knowledgeable and the food, down to the curious amuse bouche, is faultless.
