The Pitch: Sofitel Dubai Jumeriah Beach

With over a decade’s worth of experience cooking dishes around the world, including in the USA, France, Scandinavia and Russia, newly appointed executive chef at the Sofitel Dubai Jumeirah Beach, Andreas Mensch, is no stranger when it comes to whipping up a feast. We chat to the man who is now in charge of the menus at all four of the hotel’s F&B outlets about French gastronomy, staying inspired and adventures in fusion.

The food at Sofitel Dubai Jumeirah Beach is made by people passionate about cooking. You can taste the love in all of the dishes. We focus on French food, so needless to say if you are a fan of French gastronomy you will fall in love with the dishes here.

What makes Mediterranean and French cuisine special is a combination of the produce and the technique, as well as the skill of the chef. In our restaurants, the most essential thing is to ensure our dishes always stay inspiring – to draw on influences from both traditional and modern flavours.

I tell my team to keep things simple; you can create amazing flavours with very few ingredients.

At The Plantation, the mains are prepared and served in cast iron pots known as cassolette or cocotte, which give the meals a wonderful home-cooked taste.

My signature dish has to be the escargots de Bourgogne à l’ail (snails in garlic, herb butter) that is now on the menu that we launched at AOC French Brasserie last month. I sauté the snails in their shells with garlic, butter and herbs, then gratinate before serving.

For intimate dining, the Infini Pool Lounge is a captivating spot to bid “adieu” to the sun. We have just launched a new menu and I’d urge people to try the ruccola salad with avocado and spiced grilled prawns, fine de claire oysters, or the lobster and asparagus. It’s absolutely ideal for Valentine’s Day.

Dubai is ideal for experimenting with fusion cooking. It is such a melting pot of influences. My team and I are working on some fusion menu options right now, so watch this space!

I find the desert in Dubai very inspiring. It is my favourite place to relax. Staring out at the sand dunes and watching them change shape in the wind really helps get my creative juices flowing.
