Who doesn’t love a waffle? Popular in Europe and across America, these grid-patterned cakes actually came from ancient Greece when chefs would use a utensil called an obelio, made of two metal plates attached to a wooden handle. From here they began to evolve as cooking plates were customised to feature crests, landscapes and other imagery. In the Middle Ages, chefs used cinnamon, ginger, cream, honey and butter, thickening them with leavening.
Before the world knew it, wafers became wafels, and then – in the 15th century – the Dutch began using circular plates with grid patterns, which saw the birth of the first modern-day waffles. The Brits shaped the modern word sometime in the 18th century.

With orange honey
This dish is composed of a tower of steaming squares that are perfectly fluffy on the inside and crisp on the outside, absorbing their orange-honey drizzle as a result. Dessert fans unite; this is daydream material. This soul-warming dish is a clever combination of brûléed banana, cinnamon cream Chantilly, candied walnuts and salted caramel sauce. The result is a wonderful salty-meets-sweet treat with an array of textures.
